Vegan Spelt Banana Bread

For me, banana bread has always been one of those reliable snacks that you know will satisfy. And let’s not forget to mention how it’s a great way to use up old bananas that are too ripe to eat.

Unfortunately, you have to be a gazillionaire to afford bananas in Australia right now, due to a series of natural disasters ruining farmer’s crops. That being said, I had a huge craving for some banana bread. So when I saw some old bananas that were discounted I jumped at the opportunity.

To tell you the honest truth, I’ve always struggled making banana bread. It always ended up burnt on the edges and uncooked in the middle. Not in this case. This was truly the nicest banana bread I have ever had.

  1. Very nice looking banana bread :D So sad about bananas being so pricey right now! We practically live off bananas in our house, it would be a huge adjustment not getting them anymore, or at least not getting a lot of them. I love the almond flour in your bread, I’m curious to try that next time I make banana bread :)

  2. I am super lucky at the moment, my neighbour has a tree that has survived all the various ills in Queensland and so we have an abundance of bananas!
I just made pumpkin and banana bread on spelt flour the other day. The maple syrup brings out the banana beautifully too. This looks delicious :)

  3. The good news about bananas is many farmers are almost at 80% production again in QLD, so we can start to see prices dropping to near normal by Xmas!
I can’t imagine you not making perfect banana bread in the past, I simply love your spelt recipe! It looks dense and moist and simply amazing. Ingredient wise it’s very similar to my own go-to banaa bread recipe except I use LSA and chia seeds, some agave and a a tiny amount of blackstrap molasses.

  4. Because something doesn’t do that which you planned it to perform doesn’t suggest it’s useless.
When did it turn into a problem to be a small businessman and become successful? The tiny businessman – like my pops, or at all like me?
