Pancakes will always have a place in my heart.
I haven’t experimented with coconut flour all that much. So I love when my first experiments work out. Today’s experiments turned out very light and fluffy due to the baking powder and the blood orange and soda water. Just by chucking all the ingredients into the blender, I was able to have a beautiful breakfast in no time. Let’s have a look at the inside of the fluffy pancake and the soft colour from the blood orange…
These pancakes can be tricky to flip as there is no gluten holding them together. If you like, you can experiment by adding 1 tsp of xanthan gum . Otherwise, just take some care when you flip the pancakes. They are worth it

I hoped so. But I haven’t tried it any other way to see the difference. Sorry for the slow response – I’ll have to do some experimenting for you to make up for it.
Yum these look great! I’ve made some cranberry orange mini muffins with coconut flour and they turned out great…I love how moist they were
