Last weekend was City2Surf in Sydney. Brendan and our friend from Brisbane were taking part in the race from Sydney City to Bondi Beach. This called for some delicious breakfast, satisfying and filling enough to get anyone through the 14km race.
How about some Orange & Pistachio Granola?
You can see slices of orange peel too! I decided to add some thin slices of orange rind and peel while the granola baked. You can do this too if you like. But if you are planning on keeping the granola for longer than a few days you will want to take them out before you store the granola.
You can easily make this granola gluten free if you wish. To do this, use gluten free rolled oats, flax meal in place of oat bran, and either omit the spelt flour or replace it with tapioca starch. Simple!
